Eggplant with pomegranate glaze

We served this with steak however it could even be good with different vegetable dishes.
Pomegranate glazed eggplant – for 4 individuals
- 2 massive eggplants, peeled and reduce into 1 inch rounds
- 3-4 tablespoons of olive oil
- 2 tablespoons pomegranate molasses
- 3 tbsp maple syrup
- 1 spring onion, finely sliced on the diagonal
- an excellent handful of salted peanuts, chopped
Preheat the oven to 220C/200C sizzling air/Fuel 7.
Cowl a big baking tray with parchment paper.
Place the eggplant slices on the baking sheet and brush either side with olive oil. Bake within the oven for 22-25 minutes till cooked however not browned.
Combine the pomegranate molasses and maple syrup, use a pastry brush to evenly coat either side of the aubergines and sprinkle with some sea salt flakes. Roast for an extra 5-6 minutes or till translucent and sticky.
Sprinkle with the spring onion and peanuts earlier than serving.
