Pork shoulder in tomato-sherry sauce with lemony couscous – 6 p

- 1 purple onion, finely chopped
- juice of 1 lemon
- 250 grams of couscous
- 3 tablespoons of additional virgin olive oil
- 450 ml hen inventory

- 2 candied lemons, peel finely chopped and pulp discarded
- ½ cucumber, peeled, seeded and finely diced
- 30 g toasted flaked almonds
Preheat the oven to 160C/140C fan/gasoline 3.
Season the pork with salt and pepper, then warmth the olive oil in a big frying pan and brown the pork in batches on all sides.
