Roast Hen With Coconut Rice And Beans

Roast rooster with coconut rice and beans – for 4 individuals
- 8 rooster drumsticks
- 2 tbsp canola oil
- 1 tablespoon jerk herbs
- 25g butter
- 275 g basmati rice, rinsed
- 1 can of coconut milk of 400 ml
- 350 ml scorching rooster inventory
- a bunch of spring onions, thinly sliced
- 1 400g can kidney beans, drained and rinsed
- 2 cloves garlic, minced
- 1 tsp contemporary thyme leaves
Preheat the oven to 200C/fuel mark 6.
Rub the rooster legs with the oil and jerk seasoning.
Generously grease a big roasting tin with the butter.
Add the rice and pour within the coconut milk and rooster inventory.
Divide half of the spring onion over it, then the kidney beans, garlic and thyme and stir gently.
Place the drumsticks on high, cowl with foil and bake for half-hour.
Take away the foil and roast for an extra quarter-hour or till the drumsticks are golden brown and cooked by way of.
Garnish with the remainder of the spring onions and serve.
