Shahi Gobi Saalan – Cauliflower Curry

A wealthy and delicate curry recipe from Asma Khan.
Wine suggestion: We predict this dish pairs very well with a great Pinot Gris, just like the Neudorf Moutere we have been tempted to open. Dry, however stuffed with fruit and dusty, heat spices.
Shahi Gobi Saalan – 6 servings
- 7 tablespoons of vegetable oil
- 1 giant bay leaf
- 2.5 cm piece of cassia bark
- 2 inexperienced cardamom pods
- 1 clove
- 5 onions, thinly sliced
- 2 tbsp garlic paste
- 2 tbsp ginger paste
- 2 tsp floor coriander,
- 1 tsp chili powder
- 2 tsp salt
- ½ tsp sugar
- 250ml water
- 750 g cauliflower florets, minimize into 5 cm items
- 1-2 400 ml cans of coconut milk
- 6 tablespoons of floor almonds
- a handful of toasted flaked almonds to garnish
Warmth the oil in a big, heavy saucepan over medium warmth. Add the bay leaf, cassia bark, cardamom pods and cloves. As soon as the cloves start to swell, add the onions and prepare dinner, stirring, till they start to caramelize.
Add the garlic and ginger and prepare dinner for 1 minute, then add the coriander and chilli powder and prepare dinner for an additional minute, stirring, to prepare dinner out the spices. Add a splash of water if it begins to stay. Add the salt and sugar and pour within the water. Carry to a boil, then convey to a sluggish boil, cowl and simmer till the oil involves the aspect of the pan.
Add the cauliflower and stir to coat the onion combination. Carry to a boil, cut back warmth barely, cowl and prepare dinner for about 5 minutes or till cauliflower is simply tender. Style and add extra salt or sugar to style.
Add 1.5 cans of coconut milk and the bottom almonds and prepare dinner, uncovered, for a couple of minutes. You need a thick and creamy gravy so solely add the remainder of the coconut milk if wanted. Sprinkle the flaked almonds on prime to serve.
