Rigatoni cake

Rigatoni cake – for 4 individuals
- butter, to grease the mould
- 4 tbsp breadcrumbs
- 325 g of rigatoni pasta
- handful of basil leaves, finely chopped
- 250 g mozzarella, diced (purchase a block of mozzarella, not buffalo)
- 50 g grated Parmesan cheese
FOR THE TOMATO SAUCE:
- 2 tbsp additional virgin olive oil
- 1 garlic clove, peeled and crushed
- 2 x 400g cans of diced tomatoes
- a handful of basil leaves
Preheat the oven to 180C/160C fan/fuel 4.
Line the underside and sides of a 20 cm spherical loose-bottomed cake tin with baking paper, butter and sprinkle with breadcrumbs.
Get the sauce going first. Warmth the olive oil in a medium saucepan over medium warmth, then add the garlic clove and prepare dinner for a few minute. Add the chopped tomatoes, a lot of the basil leaves and season effectively with salt. Cowl and simmer for 25 minutes, stirring sometimes.
In the meantime, prepare dinner the pasta in loads of boiling, salted water till al dente. Drain effectively and blend with the chopped basil, half the mozzarella, some black pepper, half the tomato sauce (discard the garlic) and half the Parmesan cheese. Let cool till pasta is cool sufficient to deal with.
Place the rigatoni upright within the cake tin. Pour over the remaining tomato sauce and sprinkle with the remainder of the mozzarella and Parmesan cheese. Bake for 25 minutes, till golden brown. Let relaxation for five minutes earlier than attempting to unmold and sprinkle with basil leaves to serve.
