Turkish macaroni

We heard about this dish on The Meals Program on BBC Radio 4, as lovingly described by Leyla Kazim in a program about Cyprus and halloumi/hellim. We could not wait to attempt it. Constructed from the outline by Leyla and scouring the web for portions. Scrumptious consolation meals and a brand new method with halloumi (for us at the least).
Turkish macaroni – for 4 folks
- 200 g halloumi
- 2 tbsp dried mint
- 400g wholemeal pasta, we used penne
- 2 liters of excellent hen inventory
- 1-2 lemons
- a big handful of recent mint leaves, chopped
Finely grate the halloumi cheese and blend with the dried mint.
Prepare dinner the pasta within the hen inventory till al dente.
Place among the cheese-mint combination within the backside of 4 bowls. Spoon some pasta and broth over every portion and sprinkle with one other layer of cheese and mint. Add one other layer of pasta and end with a remaining layer of cheese. Sprinkle with the recent mint and squeeze over some lemon juice to style.
