Lemon and blueberry muffins


Makes 12

Components

  • 175 g unsalted butter, tender
  • 175 gr caster sugar
  • 1 lemon, grated
  • 3 eggs
  • 200 grams of self-raising flour
  • 150g blueberries

For the buttercream

  • 60 grams of unsalted butter
  • 250 grams of powdered sugar

Methodology

  • Preheat the oven to 160°C scorching air and line your muffin tray with shapes.
  • Beat 175 g butter and caster sugar within the mixing bowl till creamy with an electrical hand whisk. Add the eggs and beat to mix.
  • Add the flour and lemon zest and blend till easy, earlier than stirring within the blueberries.
  • Divide the batter evenly between the baking paper-lined muffin tin and bake the muffins within the oven for 20-25 minutes till the muffins are golden brown and springy to the contact within the centre.
  • Whereas the muffins are baking, make the buttercream by mixing 60 g butter, the icing sugar and the juice of the lemon till easy.
  • As soon as the muffins have cooled, ice them with the buttercream and high with extra recent blueberries.
