Alphabet in Brodo

Consolation meals at its finest. Do not be tempted to pressure the hen broth of fats, it provides to the flavour and do not skimp on the salt. You should utilize the poached hen meat for sandwiches, or anything.

Albetto in broth – for 4 individuals (the recipe makes double the quantity of inventory wanted and it retains within the freezer)

  • 800 kg hen thighs (with pores and skin and bone)
  • 1 onion, peeled and halved
  • 1 carrot, peeled and halved
  • 1 celery stalk, halved
  • 1 bay leaf
  • a couple of peppercorns
  • 200g alphabet
  • grated Parmesan cheese, to serve

Place the hen in a big heavy saucepan, cowl with 2.5 liters of chilly water and add a beneficiant pinch of salt. Carry to a boil, cut back warmth to low and use a slotted spoon to skim off the froth.

Add the greens, carry again to the boil, then cut back the warmth to low, cowl and simmer gently for 1 hour and quarter-hour.

Pressure via a superb sieve, urgent on the greens and hen to extract all the flavour. After this you do not want the hen anymore, however it’s good to take the meat off the bones and put it aside for one thing else.

Carry 1 liter inventory to the boil, add the Alfalfa and cook dinner till al dente. Switch to a bowl and add grated Parmesan cheese.
