Salmon and Spinach Curry

A scrumptious mild curry from Made in India by Meera Sodha. It is fast to make and excellent for a Friday night time. We served with rice.

Wine suggestion: Since this dish is kind of mild, we predict a grenache-based rosé is the best way to go right here, with Chateau Pesquié Terrasses Rosé as our alternative tonight. The fragile pink fruits complement the salmon very nicely and the open, softer nature of the grape takes over the spiciness and finishes it off.

Salmon spinach curry – for 4 individuals

  • 2 tbsp canola oil
  • 1 cinnamon stick
  • 6 complete peppercorns
  • 2 cloves
  • 1 giant onion, chopped
  • ½ tsp brown sugar
  • 250 g ripe tomatoes, coarsely chopped
  • 4 cm piece of ginger, peeled and finely grated
  • 4 cloves of garlic, crushed
  • 1 contemporary inexperienced chilli, finely chopped
  • ¼ tsp garam masala
  • 1 tsp floor cumin
  • 1½ floor coriander
  • ¼ tsp floor turmeric
  • ½ tsp chili powder
  • 1¼ tsp salt
  • 500 g leaf spinach
  • 400 g skinless salmon fillets

Warmth the oil in a big deep pan with a lid. Add the cinnamon stick, peppercorns and cloves and cook dinner for a minute or two till aromatic.

Stir within the onion and brown sugar and cook dinner for 10-12 minutes till golden brown and caramelized. Stir within the tomatoes, cowl with a lid and cook dinner for about 5 minutes, or till the tomatoes start to melt.

Add the ginger, garlic and inexperienced pepper, then stir within the garam masala, cumin, coriander, turmeric, chilli powder and salt. Cook dinner the combination, stirring so it would not stick, about 8 minutes. It is beginning to seem like a paste. Add the spinach, scale back the warmth to low and canopy with the lid till wilted.

Reduce the salmon into very giant items (about 6cm x 6cm) and add to the pan. Toss within the tomato-spinach sauce, however watch out to not break them up. Cowl with the lid for 5-7 minutes, or till the fish is cooked by.

Take away the cinnamon stick, verify the style and serve with rice.
