Spaghetti With Creamy Lemon Sauce

We love a lemon spaghetti and it is our go-to meal when there’s nothing for lunch. This one has cream as a result of we had some within the fridge from one other dish.

Spaghetti with creamy lemon sauce – 4 p

  • 2 lemons
  • 4 tbsp additional virgin olive oil
  • 220 ml whipped cream
  • 1 egg yolk
  • 350 grams spaghetti
  • a small bunch of thyme

Carry a big pan of water to the boil.

In the meantime, finely chop the lemons and place them in a deep frying pan, then add the olive oil and gently fry over medium warmth for a couple of minutes.

Pour the cream and egg yolk into the pan and blend properly, then scale back the warmth to low and simmer for five to 10 minutes, stirring often.

Add loads of salt to the pasta water, then add the spaghetti and cook dinner based on bundle instructions.

Finely chop one third of the lemon.

Drain the pasta in a colander however maintain a few of the cooking water. Squeeze the juice of the remaining lemons into the sauce and season with salt and black pepper, then pour within the pasta. Add a splash of the pasta cooking water, then add the lemon slices and toss. Sprinkle generously with thyme leaves and serve.
